This hazy, juicy IPA is hopped heavily with Citra and Simcoe, then paired with choice American wheat and two-row barley. Intentionally unfiltered to spotlight the rawness of organic hops, this IPA is less bitter but more flavorful and balanced than most West Coast versions.

This beer is mild yet complex in its delivery. The hop presence is noticed by subtle flavors of pineapples that meld beautifully with the slightly spicy and minty character derived from the use of Rye malt. A somewhat recently pioneered style, this Pacific Ale is delivered unfiltered to accentuate its fresh farm to glass, unprocessed, organic qualities.

This beer falls into the “specialty” category, but it’s based off an American Pale Ale and inspired by a delicious cocktail called the “Moscow Moose”. The ginger is present, yet subtle as is the rye. Jack Lamb, the owner of Aslan, has a father Pete. Like many folks out there, Pete can no longer drink alcohol. So, we made him a beer he could drink, and named it after him. Pete's NA is a light bodied ale, brewed to emulate an IPA. It was made with unmalted wheat, spelt, and buckwheat to create a very low ABV beer post fermentation. We then evaporated the remaining alcohol and dry hopped it with Sterling Hops. This beer will not get you drunk, but it will make you think you are drinking an IPA.

CAPTAIN PLANET IPA

An Earth Day celebration beer made in collaboration with our fellow B Corp friends at Crosby Hop Farm, along with our pals Skagit Valley Malting. Mashed with only Skagit Valley Malt, which consisted of mostly Vienna, and equal portions of pale and wheat malts. Hot side hop additions consisted of Idaho 7 and El Dorado hash. The beer was then finished with a judicious dry hop of Idaho 7 and El Dorado. The best way to describe this beer is piña colada. Notes of coconut and pineapple fill the aroma and flavor.

For the 2019 version of FIFA we decided to take this beer back to its roots. Rather than creating an IPA with Belgian yeast, we sought to create a hoppy Belgian beer. The classic yeast profile is balanced against Southern Hemisphere hops to create a flavor experience that is best described as Fruit Stripe gum. Krausening created the carbonation in this beer, giving it a more refined finish.

KING OF THE MOUNTAIN

We collaborated with the legendary Rainier Brewing Co. to bring you a limited release pilsner available in 6-pack cans and draft. This double decocted pilsner style lager was fermented at 8C and lagered for 6 weeks. Hopped exclusively with Hallertau Blanc and carbonated 100% naturally. Hoppy like a northern German pils with the complex malt character of a Czech pils - just the way we like it! This beer will be released to coincide with the opening day of Mt. Baker Ski Area’s Legendary Banked Slalom and will benefit Protect Our Winters.
MEGATHRUST 2019 (Triple IPA)

For the fifth year in a row we bring you Megathrust, our most over-the-top IPA. This year's version was dry hopped with Citra and Mosaic, while Citra and Idaho 7 where used on the hot side. This beer packs a powerful punch, but also presents refreshing notes of citrus and piña colada.

RAUCH SPEZIAL (Märzen Rauchbier)

Modeled after the famous lager of Brauerie Spezial in Bamberg, Germany. This rendition would not be possible if not for Skagit Valley Malting. Sourcing organic ingredients is hard, but finding an obscure smoked malt in organic form proved impossible. So Skagit Valley stepped in and made us a custom beechwood smoked malt that is certified organic. The smoke aroma is evident, like smoked bacon or even campfire, but delicate on the tongue, and provides waves of complexity without being overpowering. Decoction mashed and lagered for 6 weeks for a clean authentic Rauchbier. Aside from the Skagit Valley malt, all of the ingredients where sourced from the Deutschland.

Brewed in similar fashion to the northern German style pilsner, we named this beer Coastal Pils as a nod to Germany’s coastal region where notable examples exist. Not to be confused with a Bavarian Pilsner, this style has a more pronounced zest and citrus-like bitterness. While not German, we prefer the flavor of Czech Saaz hops, which were used at a rate of 1 lb per barrel to create the distinct hoppy flavor. This lager is fully attenuated, hoppy with a refreshing mineral finish.

This intense Imperial Milk Stout was brewed with over 30 lbs of custom roasted, organic Guatemalan coffee beans from our friends at PRIMR Coffee. Pitch black in color, chocolatey and smooth, the sweetness is complemented with deep coffee notes that linger on the palate.

館山市 (Tateyama) // Japanese Lager

This premium quality pale lager is made with whole white rice and German Pilsener malt, which went through a 4-hour cereal/decoction mash. Lightly hopped with Strisselspalt for a hardly noticeable 17 IBUs. Fun fact, when Budweiser still used real hops they used Strisselspalt after they had to switch away from Saaz. This beer is dry, crisp, and intensely satisfying.
SVETLY 12° (Czech Style Pilsner)

In the Czech Republic golden lager is not called Pilsner, unless it’s THE Pilsner. That being Pilsner Urquell. All others are referred to as Svetly Lezak (say it: SaVET-lee LEH-jhack) with a number 10-12 telling you how strong the beer is. The rest of the world has done a fine job of diluting the word "Pilsner", or Pilsener if it’s German. But this beer won’t be doing that. A recent trip to the Czech and a lengthy conversation with the Brewmaster of Pilsner Urquell - who was kind enough to instill the knowledge needed to make authentic Svetly Lezak - led to the inspiration of this beer. This beer follows ALL regulations set forth in the German Purity Law (of 1927) and is authentically brewed to the exact standards of real Czech lager. The mash consisted of a single heirloom variety of Moravian malt (no caramel malt), was triple decocted, and zero modifications were made to the brewing water. We used only Saaz hops at a rate of 1.5 lbs per barrel of wort in the kettle. Fermentation was carried out from 5° C up to 8° C for 8 days, then the beer was transferred into its lagering tank at cellar temperatures where it rested for a full 90 days. There is specifically and very intentionally a small amount of diacetyl present in this beer. This is a result due to the strict adherence to Czech lager brewing. There are quite literally only four ingredients in this beer, Moravian malt, Saaz hops, water, and yeast. Now that we dropped a small history lesson, sit back and enjoy a most authentic golden lager - Na Zdraví!
In order to make an authentic Czech Pilsner, one must use authentic Czech ingredients. For us, this meant sourcing malt and hops grown in the Czech Republic. Though we are able to source organic Czech Saaz Hops, there is no Czech malt grown that is certified organic, making this beer our first beer brewed without the USDA Certified Organic seal of approval. We stand by this beer with pride, knowing we are respecting tradition, not to mention the Czech standards in agriculture go above and beyond what we are used to in the States."

One of our favorite single hop IPA's that we brew, Mosaic was of course the only hop used in this beer. The dank aroma leads way to a fruit bomb, as if blueberry limeade where added. A unique malt bill consisting of nearly only Vienna malt and oats holds it all up.

IRISH COFFEE (STOUT)

Just in time for the Spring rains. Made with coffee from our friends at Bellingham Coffee Roasters, this beer has flavors reminiscent of cold brew. This Irish Stout takes inspiration from the traditions of the style with a subtle hint of coffee. Balancing the drying effect of the dark malts with the creamy and fruity notes in the beans, it leaves us with a smooth and delicate beer. The perfect beer for a rainy spring day.

ARCADE DREAMS (NW PALE ALE)

Trends will come and go. Tradition will always remain. As we shift our focus to brewing tradition, we want to honor those that came before us. This beer is a tip of the cap to the early days of craft brewing in America. A time when bitterness and malt driven body were still shocking to the pallet. This beer has a smooth, bready mouthfeel with a restrained, drying bitterness. A true American classic.

In collaboration with Mt. Baker Ski Area we brewed a beer to celebrate the life of former Pro Patrol and Mt. Baker Legend, Randy Hook. An easy drinking, light bodied classic pale ale, this beer was brewed with American 2-Row barley, hard red wheat, and hopped exclusively with Nelson Sauvin. The dryness of this beer accentuates the dank white grape notes that dominate the flavor and aroma. This beer is best enjoyed at a ski lodge after a long day on the mountain. Cheers to Randy!

ÜLA UNGESPUNDENT LAGER

In the Franconia region of Germany there is an orange, unfiltered lager that is brewed by nearly every brewery. It is referred to as a "Kellerbier" or "Ungespundet" - which translates to un-bunged. This orange colored lager displays a youthful freshness with notes of honeysuckle and tangerine, all supported by a bready malt character. Produced in the traditional method, this beer is lightly and naturally carbonated.
CHARLIE FOXTROT (FRESH HOP IPA)

In what has turned into an annual tradition, we have again partnered with the great people at Growing Veterans Farm in Lynden, WA to bring you a fresh hop IPA. This year we joined Growing Veterans in planting, handpicking, and brewing a super fresh, locally sourced, organic IPA. This hop heavy IPA shows restraint in an unexpected, yet thoroughly satisfying way. It is both resinous, yet quaff-able, fruity, yet balanced. Much of this is derived from the combination of all the fresh C hops Growing Veterans provided, although the sneaky element in this beer is an experimental hop used for dry hopping. 5% of this beer's sales will be donated to back to Growing Veterans Farm.

ROY FARMS (FRESH HOP IPA)

A flavor intense exposure to the beauty of Centennial hops is expressed in this IPA. It began with a trip to our largest supplier of hops, Roy Farms, to purchase 50 lbs of wet organic Centennial hops. It ended with a heavy dry hop of even more Centennial. In between we fostered the transformation of raw ingredients, including large portions of malted and raw wheat, into this very expressive IPA. We used only Centennial hops to give a direct window into its character. Lots of doug fir and pine notes come through, adding to the apparent bitterness. Each year more acreage of this old school hop is pulled in favor of new experimental varieties. While not new and buzz-worthy, this varietal is one to cherish while it’s still around.

FLANNEL BLIZZARD (PALE ALE)

A very bright and highly drinkable pale ale, brewed in partnership with the good people of Zeek’s Pizza. The idea was to create a beer that was both bright in color and flavor; something that wouldn’t detract from the experience of eating a slice of pizza. Their one stipulation, to use only Washington grown ingredient, was gladly obliged. The malt bill consists of Pilsner and Wheat malts from Skagit Valley Malting along with Chinook, Centennial and Cascade hops from Roy Farms in Moxee, WA. The result is a refreshingly dry, not overly hazy, smooth beer expressed with overtones of lemon and lime.

RHINOSAUR (WHEAT IPA)

This wheat style IPA was brewed in collaboration with Redhook Brewing Co, to help them celebrate the opening of their new brewery in Capitol Hill, Seattle. Dry hopped with Mosaic, Citra, and Simcoe, mashed with 35% floor malted wheat. Expect bright, luscious citrus notes, especially grapefruit, along with tropical fruits notes reminiscent of mango!

A bright, juicy pale ale created to help our friends and neighbors Schweinhaus Biergarten celebrate their second birthday! It exudes strong overtones of navel oranges, a slight bitterness reminiscent of the zing produced by just ripe fruit, and a soft, creamy mouth feel. This brew shines a light on a new approach to an old style.

I AM GRUIT! (BELGIAN STYLE GRUIT)

Named for the lovable extraterrestrial tree giant, Groot, this unhopped herbed ale contains lemon peel, pink peppercorn, and rosemary paired with a blend of pilsner and wheat malt. Gruit is the mixture of herbs, spices, and roots used to flavor wort in the early years of brewing before hops were popularized. The ingredients augment the fruity fermentation profile, present a clean, dry, bready character, and emulate the spicy hop profile that may be often be found in a classic saison — though this brew is far from traditional.

A special beer made in collaboration with Itek Energy and Western Solar to help raise funds for a solar panel system for Lydia Place. This zippy and bright wit-style beer is delicately hopped with a combination of Ahtanum, Chinook and Palisade hops, then conditioned with fresh, organic pink grapefruit for a subtle citrus addition. Its dry yet juicy body is complemented well by a complex, spicy finish.

This special creation comes to you from the mind of Jenn Tadder, the Bellingham Homebrewers Guild 2015 Homebrewer of the Year. In addition to some new hardware for her trophy shelf, Jenn won the opportunity to brew a collaboration beer with our Masterbrewer, Frank, and will enter it as Bellingham’s first Pro-Am entry in the WA Beer Awards! The result is a delicately malty beer with notes of toffee, a soft bitterness, and a clean, refreshing finish.

For this year's Washington Beer Collaboration Festival, we teamed up with North Fork Brewery head brewer, Eric Jorgensen. This deep red, moderately tart beer exudes flavors of dark chocolate and pie cherries. In the spirit of creative collaboration, we went a step further and dry hopped it with Nelson Sauvin to create a truly unique beer that exemplifies the strengths of both North Fork and Aslan brew.

A special style of IPA brewed to help raise awareness for our friends at the Northwest Avalanche Center (NWAC). Midnight Couloir is a very dark IPA with a robust bitterness and a dry finish. The confluence of rich malt with bitter, piney Northwest hops creates a very complex IPA perfectly paired with the colder months of the year.

NIGHT RIDERS (IMPERIAL WEST COAST PILSNER)

Night Riders is a beer brewed in collaboration with our friends at Base Camp Brewing Co. in Portland, OR. Too often breweries will only play around with ales, but one common thread between our breweries is that we like to think outside the box. That is exactly what you get with this big fruity lager. Its nose is estery like an ale, but cleaner and less muddled as you would expect from a lager. It tastes of tangerine and pineapple in a present yet subtle way that washes across your pallet effortlessly as it leaves you with a clean neutral finish.
NO COAL PORTER

This special batch of brew was created in collaboration with RE Sources for Sustainable Communities as a tribute to clean and sustainable energy. $1 per pint is being donated towards developing clean energy solutions and protecting our communities from unsafe fuel transport. This medium bodied, full flavored beer pours silky mahogany with a tan head. The nose is roasted coffee with dark chocolate. A presence of Cascade hops gives this robust porter the full flavor and balance you expect.

(SINGLE HOP IPA)

Brewed in the same manner as Simcoe Slice, this luminous and lush IPA uses only Mandarina Bavaria hops. This somewhat newer German varietal is known for its ability to kick out lots of dank melon notes. While intentionally very similar to Simcoe Slice, the hop character is profoundly different; exuding very ripe honeydew and cantaloupe overtones. A conditioning period of over two weeks, below freezing, helped create the stability and beautiful brightness in this IPA.

SIMCOE SLICE (IPA)

We don't fine or filter this beer, yet it's more luminous than the over-abundant NEIPA. Chalk it up to a long conditioning period below freezing temperatures, or maybe it's the mash technique employed. Either way, this IPA is a very lucid expression of Simcoe hops. Being the only hop varietal used, the atypical sensory notes are abundant. Diesel-y, juicy vine fruit, and that catty-ness all finish brighter and more open than we have created before. Is bright a new thing? Or is this ocean of self expression within a category sinking the ship?

DA LA ROUGE (IPA)

Brewed in the same manner as our Mandarina Queen IPA, this version uses only Barbe Rouge hops. This new experimental variety from the French hop breeding program delivers stone fruit and red berry notes with a prototypical dankness. Singular usage of hops can either work very well, or be a complete disaster. This particular variety is great all by itself.

DISCO LEMONADE (BERLINER WEISSE)

The People's Champagne is back! Brewed in the Berliner Style, this sour weisse (white) beer uses Pilsner malt from Skagit Valley along with a large volume of wheat, then fermented with Lactobacillus and our house ale strain. We create this beer every year as a toast to Summer. So raise your glasses and cans - It’s time to celebrate!

What you wont find here is the typical super malty, sticky, crazy bitter IPA. Its all about big hop flavor that keeps you wanting more.

Every year we make this beer and every year we do it slightly different. It signifies the turning of the season, from fall to the onset of winter. Made to a higher strength to create a boozy, warming beer to help with the cold weather. It was brewed with a variety of color malts and a heavy dose of Munich, then dry hopped with Chinook. This strong, amber hued ale expresses well balanced hop character, rich malt, and a satisfyingly viscous mouthfeel.

ROCKY HORROR PUMPKIN PORTER

BIG IRON (ALTBIER)

A recent trip to Dusseldorf, where much time was spent drinking Alt in the pubs of Uerig and Schumacher, inspired the production of this beer. We dont often attempt to re-create historical works, but in this case every possible detail of the production of Altbier was put under the microscope. As such, this beer went through the most intense mash regime we have ever employed. It was fermented with an ale strain very slowly and cold, and then lagered for several weeks. The rich malt character is a result of the intense mash profile. Its extraordinarily smooth body is due to the extended lagering. While its wonderfully crisp hop character is lent form the singular use of top quality Mittlefruh hops. We are thrilled with how this beer came out, and find it to be very representative of those found in Dusseldorf.

DAS BOOT (HELLES LAGER)

In anticipation for Oktoberfest we honored a more modern tradition and created a Munich-style Helles lager. It's often said that Helles is the most technically challenging beer to create. It can be considered a measuring stick to a brewers ability. To pay respect to the forebearers of the style, no corners were cut. This beer employed a decoction mash, used only nobel hops, and was lagered for 6 weeks. This Helles is 100% naturally carbonated and served brilliantly clear.

It’s time to start using your inside voice. The seasons are changing and the beers are getting darker. This beer is challenging to the senses, but ultimately rewarding. Our good friends at Pint Defiance are celebrating their 6th year. They have not only been strong supporters of craft beer, but continue to push boundaries in beer stewardship. So when they asked us to make their anniversary beer, we were honored to oblige. For this IPA we focused on Chinook in the whirlpool, then double dry hopped it with El Dorado and Amarillo. This juice bomb is slightly hazy, mildly bitter, and exudes notes of orange citrus.

Frances Farmer (Saison)

Made in the Dupont style, this classic representation of a farmhouse ale is light in color, with a soft mouthfeel that is complemented with lots of carbonation. Faint notes of bubblegum are washed away with hints of naval oranges, making this beer quite refreshing.

Brewed specifically for Bellingham Beer Week 2016, this Kolsch style ale was conditioned on 200lbs of fresh organic blackberries. The fruit turned this once straw colored beer pink, and gave it a subtle, yet defined fruit note. A mild acidity gives way to a beautifully balanced sweetness that perfectly defines this brew.

ANNIVERSARY XIPA

This special Extra IPA was brewed to celebrate our second birthday! It comes across very smooth and juicy, reminiscent of fresh squeezed orange juice. Its big body is made of floor malted Maris Otter malt, which really takes center stage. In terms of the ingredients used in this beer, it's odd considering hops are what tend to make or break IPA's. In this case the beautiful, traditional style of malting once widely used, but now difficult to find, is what supports all the juicy hop flavors in this beer. Floor malting is said to lend a unique "earthy" tone to the beer it is used in - see if you can pick it out!

We infused our Frances Farmer! Made in the Dupont style, this classic representation of a farmhouse ale is light in color with a soft mouthfeel complemented with lots of carbonation. It was fermented and conditioned with 50 lbs of organic white nectarines which add a subtle, yet complex fruit note to this refreshing brew.

Centennial Fresh Hop

Our first fresh hop beer of 2016 was brewed with 50 lbs of Centennial hops grown in a unique coastal micro-climate in Northern California. These Centennials provide intense aromas and flavors of pine which dominate in the beer. Calculated at an astounding 181 IBUs (although we highly doubt its actually that bitter), this beer is an example of what woodsy, piney and dank hops have to offer when used fresh and in the right proportions.

This single malted IPA is hopped with fresh Azacca hops from Roy Farms in Yakima Valley, delivered from the source to the boil kettle the very same day. Notes of huckleberry, and mint accentuate the pungency of the beer. While not a display of overusing fresh hops, this IPA showcases an appropriate usage to create an intense flavor/aroma experience.

Throwback Pale Ale

This Pale Ale is hopped exclusively and heavily with Yakima Cascades and Idaho-grown Chinooks, two of the original experimental hops in craft brewing. The use of rye in the mash adds intrigue to the malt bill while staying true to the clean and balanced nature of this style. The beer is highly filtered to pay our respects to the original hoppy Pale Ales that made the style popular.

DORTMUNDER EXPORT LAGER

A Dortmunder Export style lager can be thought of as a cross between a German Pilsner and a Helles. It is brewed to a higher starting gravity than other light lagers, making it a perfect winter beer. The unconventional use of Maris Otter malt works perfectly with this style, giving the firm malty body depth with a nuance of lightly toasted crackers.

A more recent Belgian style that is light gold or straw-like in appearance with subtle Belgian complexity. We amped the style up by using fresh Nelson Sauvin hops grown in New Zealand. These fine hops lend a nice layer of complexity to the beer that comes across as that of a white grape must. The semisweet body created by the use of Contential Pilsner malt completes the sensory brush stroke with a soft finish.

This special release was brewed to show off a brand new hop variety, Azacca; named after the Haitian God of Agriculture and grown organically in Yakima Valley. It is advertised as a hop big in citrus and tropical fruit notes. The pairing of it with the biscuity type malts used in the mash make for a flavor reminiscent of sunbrewed strawberry and peach tea with a finish so clean and ballanced you might think its a lager.

A refreshingly juicy Belgian Pale Ale brewed with Czech Saaz hops, a brand new hop from Yakima Valley called Jarrylo, and 50 lbs of fresh blood oranges. The sweet, slightly tart blood oranges dominate the pallet, while subtle undertones of spice are carried through from the Saaz hops and Belgian yeast.

This year’s fresh hop offering is brewed with Simcoe for bittering and dry additions and hop bursted with 50 lbs of fresh, wet Chinook hops. Picked from our specialty boutique hop farmer in Northern California and used 24 hours later. A flavor reminiscent of fresh squeezed orange juice dominates the palate, but is supported nicely with a robust British pale malt for a sweeter, softer finish. To say that this beer is saturated with hops would be an understatement!

Saison de Vélo is a Farmhouse Ale with a deep amber hue. This unconventional take on a Saison is darker than most, but remains peppery on the nose. It is not meant to be your typical Saison, but rather an interpretation of the changing season that we know as Spring.

For 2014's hop harvest we brewed this single, fresh hop ale. Using whole cone, fresh organic Gargoyle hops, this beer is mild yet complex in its delivery. The hop presence is noticed by subtle flavors of pineapples that meld beautifully with the slightly spicy and minty character derived from the use of Rye malt. A first for us, this beer is delivered unfiltered to accentuate its fresh farm to glass, non-processed, organic qualities.

Helles style lagers are Bavaria’s response to the popular Bohemian Pilsner. We are humbled to offer our version of this ancient masterpiece by “spicing” it up with a heavy dose of Rye malt (33% of the malt bill) and finishing it with our crown jewel hop, Gargoyle (you'll also find Chinook, Sterling, and Hallertau on the hop bill). Enjoy the subtle flavors of the rye as they mix perfectly with the peach/pear flavors present from the Gargoyle hops.

LE TIGRE INDIA PALE LAGER

IPL’s, as they have come to be known, are a twist on the craft classic, IPA. The main difference being that Lager yeast is used as opposed to Ale yeast. Ours is sweet from the use of Munich and C-120 malt and fruity with a clean finish, the calling card of the lager yeast. It's a deep orange hue with a very apparent floral bouquet from the Summit, Simcoe, and Citra hops.
