Organic Berliner Weisse

Ginger + Lemon + Tart

Our favorite summer refreshment with an unexpected twist of ginger. We started with our classic Disco Lemonade and added a healthy serving of ginger steeped in the boil. Ginger Disco is the perfect balance of tart and earthy, the spiciness of the ginger root complementing the pucker we all know and love from Disco Lemonade. Cracking open a Ginger Disco is the ideal way to stay refreshed in the heat of summer and keep your palette guessing.

Organic West Coast IPA

Medium Body + Bitter + Citrus

We believe that the classics will always be in style. For this year's iteration of Fish Have Feelings, we wanted to showcase some classic C hops and what better way to do that than by making a West Coast IPA. This beer has a solid malt backbone with flavors of lightly toasted bread and a hint of toffee balanced out by an assertive, drying bitterness. The hops provide flavors of lemon, lime, wet cedar, pine, and a touch of candied orange.

Employee Feature: Austin M.

Meet the face behind Aslan’s graphic design. Everything from our signature hophead logo, can labels, product photography, and oh so much more is thanks to this creative mastermind. Austin’s been working with us since the dawn of Aslan– before we ever opened up commercially.

One of Austin’s award winning label designs: Fish Have Feelings IPA

One of Austin’s award winning label designs: Fish Have Feelings IPA

Through a mutual connection with one of the owners back in 2012, Austin was asked to design a logo for what would become Aslan Brewing Co. At first, he noted, he wasn’t all that sure about the idea. But once he met the rest of the team and was officially offered the job, he decided to give it a shot.

Fast forward to today– almost eight years later. Austin has worked as our in-house graphic designer and has completed over sixty can and bottle labels for us. Some of them even winning awards for their outstanding design concepts.

“If it’s not a graphic it almost always starts with a random photo” says Austin, speaking about his design process. “I walk around and take a lot of photos.....It’s been a really cool way for me to combine my two passions (photography and art)  in a very unique way. And most of the time you won't recognize the image that I started out with. [When I’m taking photos] I’ll find something I like, like the visual texture, and I know that it will be really visually stimulating or interesting to look at. Then I start manipulating the image and stacking things… playing with color… there's never any real direction, it’s just very therapeutic. It's really all about feel.”

IMG_8746.jpg

Austin describes himself as a digital sculptor in this way- stacking and manipulating images to create a desired look. “If you watch me work it’s like sculpting more than anything else” he adds. “I know a lot of people with similar [art] styles call it ‘digital painting’, but painting is creating from scratch… What I’m doing is taking an image, laying it on top of another, and taking away the parts I don’t like [or emphasizing] the parts I do”.

The whole thing is a rather grand process.

One label project in particular Austin found particularly challenging– “The Disco Lemonade can... It’s probably my favorite, just because of how much thought I put into that.” What might seem like a fairly simple holographic label made to emulate a disco ball is actually the final product of a long, and regularly debated design concept that took over two years to fully materialize.

“There were [several] throw-away concepts for Disco. Everything I wanted to do, nobody had ever done before. And that’s when I knew I was onto something good... If nobody knows how to do it or has never done it, then I want to figure out how to do it.”

After experimenting with a few different mock-up designs, Austin recalled that none of the initial designs made the cut. “We knew it had to look like a disco ball” says Austin, “and nothing was coming close, so we gave up on the idea of canning it for a year or two because none of us were happy with the can design.”

The first Cosmic Dreams label

The first Cosmic Dreams label

Sometime down the road, the first can of Cosmic Dreams was released– A label printed overtop some holographic material that Austin had not yet worked with. “I saw the holographic label and that blew my mind” states Austin, “my brain exploded with ideas”.

So back to the drawing board he went.

Austin then began experimenting with layering colors over top the holographic material. He figured out that different opacities of white would give him the effect he desired. He even implemented a special program to randomize the coloring of each individual cell to best emulate a true disco ball effect. “Every one of those cells on that can was treated differently”, adds Austin. “That’s why I love that project– because there was so much brainwork involved and the thought that went into it… the literal years I spent thinking about it”.

Now this can is seen on shelves all over the Pacific Northwest– famous for its striking disco ball appearance. The shiny labels are often seen stripped from their aluminum cans and repurposed into homemade stickers or, in one instance, used to decorate the entire frame of one woman’s bike for the Burning Man Festival.

“It’s a cool way to give people a little peek into my brain” says Austin, speaking about his artwork over the years. But his art only scratches the surface of his interests. “I’ve changed what I've wanted to do dramatically over the years”, says Austin, “I went from wanting to be a professional athlete to wanting to build drag cars... Then I was gonna be a marine biologist, which- I’m still really passionate about”.

He says that the ocean is one of his biggest passions and inspirations to his art. In particular, sea anemones. “I love flowers and photographing them… and I think maybe that’s why I like sea anemones so much. They’re like the flowers of the ocean.” In the future, Austin hopes to take diving lessons so that he can photograph these elements of inspiration underwater.

Beyond art, photography, and his other creative mediums- Austin has one true passion that he spoke about:

“Martial arts is my main passion”, he says. “Boxing, Muay Thai, all that stuff”. Pre-Covid times, Austin was actually training for his first big fight. Unfortunately, as the pandemic halted his practices, he was unable to compete. However, athletics have always been an important part of Austin’s life. Since growing up in Idaho and playing baseball his whole life, he has continued to stay active in his adult years- enjoying things such as skateboarding and running. “I’ve always viewed myself as an athlete more than anything else” he says, “Even more than being an artist”.

As the world starts to slowly re-open, Austin hopes to continue his martial arts training so that he can compete in his first fight. He also hopes to soon travel down to Mexico to fulfill a lifelong dream of traveling internationally and to learn how to scuba dive. While the future is pretty uncertain right now, we have to say we feel pretty lucky to have so much talent on our team. Austin, whatever you do next– we’re sure it’ll be awesome. Thank you for all of your hard work and dedication to this team.

Organic Vollbier

Our Helles is an ode to the traditional Helles of Southern Germany. Showcasing only Pilsner Malt, this beer presents malt-forward while being rounded out by a restrained bitterness. This beer is extremely drinkable, designed to be consumed in a German beer hall (or if you can't find one your local socially distanced outdoor patio will do).

Making its third appearance, Captain Ron is back! We've used the same base as the previous two batches but changed up the hops. This time around, we used New Zealand varietals to give off aromas of fresh-squeezed orange juice and a hint of white pepper. The soft mouthfeel helps carry flavors of tropical fruit (specifically pineapple), orange juice, fresh-cut grass, and a dash of vanilla. All the while maintaining balance and creating a summertime refresher in the form of a hazy IPA.

Introducing the American Lager– a brilliant, dry, hoppy, American pilsener beer. One night, on the way down the rabbit hole of sleuthing the American lager brewing traditions, a near-complete breakdown of the process, ingredients, and flavor profile of Schlitz lager was discovered. This beer follows those clues to re-create what industrial lager tasted like in the mid-1930's. American lager brewers were obsessed with replicating the famous hop/pitch bite of Pilsner Urquell, and as a result, the pale lagers in this era actually had quite a bit of hops in them. Cereal mashed corn grits, double decocted with American 2-row barley, and hopped to 30 IBU with the finest noble hops.⠀

A Word From Our CEO on Diversity, Equity, and Inclusion at Aslan Brewing Co.

Now, more than ever before, we must be more active with our intentions. No longer can we simply say that social equity is a key element of our ethos and lay satisfied with the status quo. We have to be actively anti-racist. We must ask more questions, do the research, create both short and long term improvements, and take action.

As a company owned by three white males, in an industry that is predominately white and male, we have a long way to go to build real social equity internally and within our community. We won't be able to solve everything overnight. In fact, we will never truly be able to say we are finished with the work of building and maintaining an inclusive and equitable culture. We have a duty to keep the conversation going. With that, we will commit to taking small, but frequent steps that will continue to move us into a positive direction in regards to Diversity, Equity, and Inclusion (DEI) in both the workplace and the community at large.

To begin, we look internally:

  • Update Mission Statement - A company's mission statement establishes the intentions behind the operation as well as the foundation of its ethos. As times change and our focus evolves, I believe our mission statement should follow suit. This is a simple first step that will help point us in the right direction, from the foundation up. We introduced specific language regarding social equity to help establish DEI as a pillar of our organization.

    • "Our mission is to produce and distribute world-class organic beer using local resources, low-impact practices, and socially equitable initiatives in order to promote a healthier, happier, and more conscious community."

  • Integrate DEI into Hiring Practices - Another way we can make systemic changes to promote DEI in the workplace is to update our hiring practices. We must explore how we can use various recruitment avenues in our hiring practices to ensure we reach a larger, more diverse demographic, including those in Black and Indigenous communities, People of Color, and other underrepresented demographics. We cannot simply wait for change; we must actively seek it. These recruitment efforts will become a standard practice effective immediately.

  • Create a DEI Committee - Probably the most important thing we can do to bolster DEI in the workplace is to ensure this conversation continues indefinitely. It is important to create a platform for employees to provide suggestions and challenges for DEI and ensure action items are consolidated properly and presented to leadership for consideration. To accomplish this, we will create a DEI Committee with representatives from each department within the company. This committee will be tasked with defining concrete and measurable goals for us as a company to track our DEI progress and ensure that our actions produce the necessary results.

We will then look externally:

  • Community Outreach and Philanthropy - As a company rooted in giving back to the community, we have massive opportunities to directly impact people and organizations in need. Finding ways to incorporate social equity as one of our pillars of philanthropy will help directly bolster DEI in our community. We will continue to explore how to use our business as a force for good and establish long-term initiatives in giving in this realm. Sustained outreach is the key. We must keep momentum strong.

    • To start, we shifted focus for our Fourth of July beer, which was originally going to be a holiday-focused beer release, celebrating our independence. Instead, we took the American Lager we brewed and will be using it to raise funds for Black Lives Matter Seattle-King County. 100% of Aslan's profits will be donated and we are finding other businesses that will do the same when they sell the beer on draft or over the counter. This is an example of a short term campaign that will contribute to our philanthropic pillar in social equity and raise awareness within our community.

As we move forward and shift our focus, it will also be important for us not to forget about our current workforce and ensure they are being heard and feel included. The DEI Committee will play a crucial role in this, as representatives of the committee will be responsible for gathering feedback from their peers. In addition, we will continue to promote interdepartmental communication and transparency so our staff stays informed and up to date on the happenings within the company.

Indeed, there is a lot we can do. Small, but frequent steps will be our approach, helping us get to where we need to be.

Cheers!

Meet Shanna–

Aslan’s Director of Human Resources. Shanna has been with us since we first opened in 2014-  six years ago! “I was [Aslan’s] first interview, which was really funny” says Shanna, “I wrote an ode to beer on my cover letter and I think that really helped me stand out”.

Originally hired as a server and beertender, Shanna grew into larger roles as the brewpub grew- eventually landing herself in the HR position 3 years ago. A role she created for herself.

“I never thought about doing HR before… right before I got the job here I was going to go into nursing which is what my undergrad was geared towards” states Shanna. But as time went on she found herself take on a sort of ‘liaison’ role, acting as an unofficial HR Manager before Aslan was able to help create the role for her.

“I actually suggested it” says Shanna. “Having been someone that's worked in hospitality for 20 plus years and been an employee for multiple employers, It’s really cool to feel like I have a platform to fight for employee rights and that it’s received really well by ownership. They want that too.”

”I just like to be someone here for our employees to talk to” she adds.

image-asset.jpg

In her 6+ years with us, Shanna has devoted her time to learning the inner-workings of Aslan– describing herself as a bit of a generalist. “I do a little bit of everything” she says, “that’s helped me really learn everything in a ground-up sort of way”.

“My problem has never been finding what I like… It’s honing in on one thing. That’s my problem. I like a lot of things”. This coming from the woman who just finished writing an entire horoscope section in our upcoming brewpub newspaper, based off of actual research and her random but astonishingly thorough knowledge of the Zodiac signs.

In tune with this, Shanna also partakes in improv and juggling. “I haven’t juggled in years but I used to juggle quite a bit. I can juggle balls, I have clubs, and I have fire clubs but I don’t light them on fire anymore because I’m not very good at that…”

“I need to get rid of those fire clubs” she adds with a chuckle.

Shanna also enjoys less extreme activities. Since the pandemic hit she says she has particularly enjoyed cleaning her house, cooking, and spending time with her dog. She also spoke briefly of her dream to start a podcast in the near future.

To simply sum Shanna up as multi-faceted would not do her justice. Shanna is many things in life and here at Aslan, whether that be a friend, coworker, mentor, HR Manager, or in-house astrologist. She is equal parts empathetic and diplomatic– always lending an ear to each and every employee and looking for ways to continuously help us improve our work ethic and work relationships.

Shanna is described by her colleagues as compassionate, loyal, genuine, hilarious, attentive, humble, wise, patient, and oh so kind. We are incredibly lucky to have had her on our team for the past 6 years.

When asking Shanna if she had any final thoughts during her interview she answered “This is a really special place with lots of special people”. We agree Shanna, and we think you’re a big part of what makes Aslan so special! Thank you for your hard work and dedication to this team. We are so thankful to have you.

NOW IN CANS: Žatec

IMG_8482.jpg

Žatec

Czech Style Pale Lager 4.2% ABV // 40 IBU // 11.0 P

Medium Body + Bright hops + Earthy malt

Zatec is an 11-degree Czech style pale lager, brewed in accordance with Cseke Pivo regulations. In the Czech Republic, Pale Lager (only Pilsner Urquell is called Pilsner) is separated by its original gravity, with 10, 11, and 12 being most common.

Brewing follows the German Rheinheitsgebot, no additives or water adjustments, double decoction mashed, Czech floor malt, hops grown in Zatec, lagered for 75 days, and served unfined/unfiltered with 100% natural carbonation.

A somewhat controversial element (in the USA) to authentic Czech pale lager is the presence of diacetyl. In the Czech Republic, it is an unspoken requirement for the proper flavor of the beer. American brewers leave it out, and have adopted a style guideline for the beer that encourages its absence — the so-called Bohemian Pilsner category, which weakly represents the traditions and flavors of Czech lager. In fact, authentic Czech lager is in many ways the most misunderstood style in American craft brewing.

Zatec intentionally has 100ppb of diacetyl in it, as we went to painstaking lengths to make this beer authentic. This beer is bright, clean, and perfectly bitter with earthy malt and a supported mouthfeel from the diacetyl that encourages sip after sip.

Our Fourth Flagship Beer is Finally Here — Cosmic Dreams!

We are stoked to announce the release of our fourth flagship beer at Aslan Brewing Co. — Cosmic Dreams!

Drift away to an intergalactic tropical paradise. With notes of freshly pressed tangerine, mandarin, and navel orange juices, Cosmic Dreams was built for the great outdoors. Pacific Gem, Amarillo, El Dorado, & Simcoe hops come together to produce quenching bitterness with a pointed hop character. Designed with slightly lower alcohol content (6.0% ABV) for longevity and reduced calories, we are happy to add this new offering to the flagship family!

Cosmic Dreams has taken many forms at Aslan throughout the years. Initially, this beer was a one-off draft-only IPA we released in March 2017. In 2018, we decided to upgrade Cosmic Dreams as Special Release No. 1, our first non-flagship canned beer. Over four years later, Cosmic Dreams has cemented itself as one of our core offerings.

Cosmic_Dreams_Timeline.jpg

Similar to Batch 15, Dawn Patrol, and Classic, Cosmic Dreams will be available year-round throughout our distribution network, including Washington, Oregon, California, and British Columbia. As of today, folks can find Cosmic Dreams at our Bellingham Brewpub, Aslan Seattle, and at accounts in Bellingham just in time for Memorial Day Weekend. Next week we will expand our distribution to Seattle retailers, and other markets will be a fast follow.

A Virtual Thank You: Celina Carros

We’d like to take a moment to spotlight a very special employee of ours– Our Events Coordinator, Celina Carros. After 5+ years with us, Celina is moving onto new adventures. She poured her heart and soul into her work here- whether that meant throwing incredible parties, organizing fundraisers, connecting with our brewpub artists, or hand-drawing every. single. chalkboard. sign. at the brewpub– Celina tackled any project or task, no matter how large (and made it look easy!)

In light of COVID-19 we have opened up this blog as a “virtual thank you card”. If you have worked with Celina in the past & would like to leave her a note– please scroll to the bottom of this page to the comments section to do so.

IMG_3014.jpg

“Celina's magic came through her ability to create a stage for our community to be heard. She connected us with local artists, small independent businesses, and diverse nonprofits– curating experiences that made the town a little brighter. She empowered women and helped create the positive and inclusive ethos that I love to see at Aslan. I will always thank Celina for showing me what a good party looks like!”

-Jack Lamb // CEO & Owner

funk forum prep2.jpg

“I've got to watch Celina grow as a person and develop all types of skill sets from my time here at Aslan (about 5 years). Starting off as a support staff member all the way to her most recent role as our events coordinator (and everything in between). She excelled in all roles Aslan had to offer. She has had a lot of successful busy Brew Pub shifts and coordinated both large and small events, but my favorite thing Celina did throughout her time here was how she was always looking out for co-workers. Anytime someone had an achievement in life or at work Celina was always looking for a way Aslan could show the love. Same thing with the negative stuff life tosses us, she always lent an ear to listen and good advise (wise beyond her years). I have no doubt she will continue to have success in anything she does in the future.”

Much love to CC!”

-Matt Kelly // Brewpub GM

IMG_3015.jpg

“My favorite memories were all of the events that went smoothly! The Schooner Zodiac sailing nights were always a treat. And obviously all of the Anniversaries, Beer Weeks, April Brew’s days, Washington Beer Festivals, and Ciao Thyme dinners. 5 years sure flew by! She did one hell of a job and helped us so much. I’m super grateful for all of her hard work and dedication. I’m excited to see what she decides to put her mind to next!“

-Boe Trosset // Director of Sales & Owner

Celina.jpeg

“I didn't get to work with Celina for very long, but even before I worked for Aslan, I knew who she was because she was always buzzing around the brewery with a smile on, seemingly on a mission every time I saw her. Whether it be at an event or just day to day, Celina owned everything she did, because she did it so well.

With every event she put on, every band she booked, and every piece of art she hung in the brewery– there was a little piece of her in it because of that personal touch she was so good at leaving. When I started at Aslan, she quickly became one of my favorite people to work with as well as confide in because she was just so easy to talk to...I will miss her so much”

-Layne Carter // Local Brand and Sustainability Manager

IMG_4077.jpg

“Celina started out as a hostess and worked her way up to Events Coordinator - all through hard work and dedication to improving her skill set. She always had a way of pulling things together around here when (especially in the early days) there was a lot of chaos to work through. Particularly with events such as our anniversary party; When everyone around her was enjoying the party, she was dedicated to making the event work and be special. That is a very selfless act. This is one of many examples that speaks to her professionalism. … She will be forever remembered for her tenacity and what she helped us achieve … I'm excited for her next adventure and all the growth she will experience from it. Cheers CC, you’re a star that will always shine brightly!”

-Frank Trosset // Head Brewer & Owner

IMG_4100.jpg

“There are so many reasons why working with Celina was influential & an experience I am going to miss! Celina is precise, funny, highly organized, passionate and outspoken. She built a relationship with my kiddo that made me feel like having a six year old in tow at events was less of a nuisance & more of a value to every experience-- I will miss having her as an example of a fierce woman in Elsa's life.

My favorite events we worked on together were events that benefited our community-- supporting local artists in the first Arts & Ales, the WMBC donor event last summer and my favorite, the Ladies MTB Film Night for Shifting Gears.  I value her friendship and the way she held inclusivity at the top of her priorities.

She is smart and strange & so very capable. You know, I just really love her and the thing I am most sure of is that I cannot wait to see where in life she is going to go and what she is going to do.”

“Oh man, where do I even start with the wonderful creature that is Celina Carros. I guess I'll just start with how thankful I am that she came into Aslan one day looking for a job. It seems so long ago that she was hosting in the restaurant. It's almost out of my memory, and maybe that's because it didn't take long for her to move into a role that she seemed destined for. Don't get me wrong, she could have thrived in any role that she wanted, but she took the Events role, and ran with it. So much so, that she defined what an administrative position could look like at Aslan. In many ways, she paved the way for the rest of us to grow into roles that had not yet existed. Her determination and self discipline, her ability to create something magical with no blueprint, gave the owners a picture of what was possible when you give someone like Celina a chance to grow. And grow she did! There is no doubt in my mind that her imagination and relentless work ethic helped put Aslan on the map. It's crazy to think about how one person can have such a huge impact on an organization, but she is one of the greatest examples that I have seen that proves just that. It was, however, her impact on me personally that I value the most. Her support, kindness, and encouragement got me through some tough times over the years. Her easy smile, irresistible giggle, and inner weirdo always made me feel like I was among my people. It's not everyday you get to work with someone so capable and fearless, and at the same time show you the strength in being vulnerable too. I will forever be grateful that I got the opportunity to work with and learn from Celina, but what I am most grateful for is that I get to call her my friend.

Oh! And the neck massages! I'm grateful for those too ;)”

“Celina is actually the individual responsible for hiring me on to the Aslan team in 2017 and I couldn’t be more thankful. She has filled many roles in my life– from boss to mentor to friend and eventually, to coworker. She was always there to listen to my aches and pains, build me up in my triumphs, and dust me off when life knocked me down. She tackled huge projects with grace and ease, stood up for what she believed in, and truly lead by example. I owe much of my success to Celina, as she paved the way for me to do my job and always made sure I was seen. I will really miss her goofy antics, our silly accents, and honestly her true friendship.

I love you CC, and can’t wait to see what’s next!”

NOW IN CANS: Klaüs

IMG_8203.jpg

Klaüs (Kölsch-Style Ale)

4.4% ABV // 25 IBU's // 11.2 P

Crisp + Lemon zing + Refreshing

Kölsch as a style is unique in the fact that it is the only beer in the world to hold an appellation upheld by a court of law. As such, only brewers in Köln, Germany, can call this beer Kölsch. The rest of us should call it Kölsch style.

Ok, how does this beer taste?! Brilliant in both clarity and complexity. A finely hoppy, crisp, light ale that is highly drinkable. Probably the strongest hallmark of Kölsch is its lemon-like tang, which comes from proper yeast selection and fermentation. Klaüs is no exception. Highly reminiscent of a lemon-lime refresher. Perfect for this sunny weather!
