In the pursuit of the perfect beer, we've brewed A LOT of different styles. On our pilot system in a little, back-alley warehouse, we brewed over 130 original batches. From that, we narrowed it down to our favorites, which we refer to as our Flagship lineup. We offer these Flagship styles year round, while our Seasonal & Special Release styles are rotating to compliment the ever changing tastes & sensations of the current season.

Our beer is certified organic by Washington State Department of Agriculture.

CLASSIC LIGHT LAGER

4.0% ABV // 24 IBU // 1.036 OG

light body + malt forward + crisp

This is your classic, easy drinking light lager beer — light in flavor, alcohol, and calories. While it may be an American macro brewery standard, it’s better when brewed in small batches without corn and rice. Pours a pale straw color with a rocky white head. For a throwback to simpler times and a taste of nostalgia, reach for a Classic Light Lager!

BATCH 15 (IPA)

6.7% ABV // 65 IBU // 1.060 OG

medium body + zippy citrus + unfiltered

This hazy, juicy IPA is hopped heavily with Citra and Simcoe, then paired with choice American wheat and two-row barley. Intentionally unfiltered to spotlight the rawness of organic hops, this IPA is less bitter but more flavorful and balanced than most West Coast versions.

DAWN PATROL (PACIFIC ALE)

5.5% ABV // 18 IBU // 1.054 OG

medium body + pineapple & mango notes + refreshing

This beer is mild yet complex in its delivery. The hop presence is noticed by subtle flavors of pineapples that meld beautifully with the slightly spicy and minty character derived from the use of Rye malt. A somewhat recently pioneered style, this Pacific Ale is delivered unfiltered to accentuate its fresh farm to glass, unprocessed, organic qualities.

GINGER RYE ALE

5.2% ABV // 18 IBU // 1.054 OG

medium body + ginger & limes + approachable

This beer falls into the “specialty” category, but it’s based off an American Pale Ale and inspired by a delicious cocktail called the “Moscow Moose”. The ginger is present, yet subtle as is the rye. The wild card is the use of limes, which shine through on the finish. This is an adventurous beer and a staple of our brewery.

B'HAM BROWN

5.0% ABV // 24 IBU // 1.058 OG

light body + roasted nuts and chocolate notes + malt forward

True Brown Ales are light in body, but not light in flavor. This beer accomplishes that with generous amounts of Chocolate, Black, Carahell, and Roasted malts along with a complicated mash schedule that delivers a malt forward beer with a light, easy drinking quality that will keep you refreshed and intrigued.

AMERICAN STOUT

6.0% ABV // 57 IBU // 1.070 OG

big body + coffee and chocolate notes + smooth

This American style stout keeps in tradition with the high volume of roasted malts used for flavor and color. Black, Roasted, and Chocolate malts are used for a roasted coffee bean, dark chocolate malt flavor. Balanced with Cascade and Centennial hops for a crisp, piney character that is neither bitter nor overpowering.

DON'S N/A

<0.5% ABV // 20 IBU // 12 P

medium body + malt forward + non-alcoholic

Don's N/A is a very special beer brewed specifically for Don Trosset, and all the other folks who don't drink alcohol! This beer was initially an accident but has become a bit of a cult classic around here. We brew this ale at normal strength with a modified mash schedule. That technique, along with the use of a very unique yeast creates a very, very low alcohol beer after fermentation. The small amount of alcohol in the beer is then evaporated to produce a true non-alcoholic craft beer. Modeled after an English Brown Ale, and brewed with Yakima Cascade hops. This fine ale has superb notes of baking chocolate, toasted bread, and roasted chestnuts. Deliciously malty with no alcohol — a true session beer!

LAMBO TAPE DECK (DOUBLE IPA)

8.2% ABV // 60 IBU // 18 P

big body + ripe mellon + smooth

What better style of beer could there be to point out the irony of consumer capitalism in the beer industry? One which costs far too much to make, yields too little, causes beer collectors to change weekend plans, and creates a wave of complaints as to why it costs so much. Double IPA - the vaporwave of beer.

Here you find a wholly synthesized version of late 2010's West Coast style IPA laid over the more modern New England movement. This subgenre samples crystal malt, full attenuation, prolific bittering qualities, hefty dry hop charges, less refinement in clarity, and a few Greco-Roman statues. This prototype focuses on ambiguous ripe melon notes, piney bitterness, and orchard fruit esters. Unsustainable to produce in an efficient way combined with too much time creating a photo for internet hype defines this style wholly.

HOOK'S STASH (PALE ALE)

5.0% ABV // 45 IBU // 11 P

light body + piney + crisp

Back for year two, and in collaboration with Mt. Baker Ski Area, we brewed a beer to celebrate the life of former Pro Patrol and Mt. Baker Legend, Randy Hook. This easy drinking, light-bodied hazy pale ale was brewed with American 2-Row barley, hard red wheat, and hopped exclusively with Nelson Sauvin, Taiheke, and Rakau. A crispy, hoppy treat with plenty of complex pine flavors that will hark the memories of dodging trees in Sticky Wicket. Best enjoyed in the company of great family, friends, and local legends. SIMCOE SLICE (IPA)

6.6% ABV // 60 IBU // 13.5 P

medium body + balanced + fruity

A single-hop IPA that straddles the line between West Coast and hazy styles. This beer is a pure expression of Simcoe since it was only hop variety used in this beer. The atypical sensory notes for Simcoe are abundant — fruity, earthy, and notes of citrus.

DUNKLES (LAGERBIER)

5.1% ABV // 10 IBU // 13 P

medium body + malt forward + crisp

The "Altmünchner Bier" is the original lager of Munich. Prior to the creation of Pilsener malt, Dunkle or Dunkles (depending on your dialect) was THE lagerbier of Bavaria. We spare no expense when it comes to the reproduction of historical classics - both in ingredients and in process.

As is the case with all of our lagerbier, a decoction mash was employed. Our ability to use this old world technique is irreplicable in terms of flavor development.

The richness of the Munich malt presents deep tones of chocolate and toffee. A long & cold fermentation, proper lagering temperatures, and 100% natural carbonation ensure a very frothy bier.

ÜLa (UNGESPUNDET LAGER)

5.1% ABV // 25 IBU // 12 P

medium body + notes of honeysuckle + balanced In the Franconia region of Germany, there is an orange, unfiltered lager that is brewed by nearly every brewery referred to as a "Kellerbier", or "Ungespundet", which translates to un-bunged. This traditional regional lager is naturally carbonated, unfiltered, and has a distinct orange hue.

The malt bill is simple and consists of malt from Mellrichstad and Bamberg - both squarely in Franconia. The hops, also Franconian, create a slight spice up front, with a notable orange marmalade finish. Cold fermented at 46 degrees and lagered below freezing in our cellar for weeks — this is a simple country-style lager, yet wildly complex.

CHARLIE FOXTROT (FRESH HOP IPA)

6.9% ABV // 70 IBU // 14.8 P

medium body + fruity + pleasantly bitter

For the past two years, we have been working with Growing Veterans for all of our fresh hop beers. Growing Veterans is an amazing organization that empowers veterans to cultivate purpose and belonging by growing community, food, and excellent hops!

This year we decided to make Charlie Foxtrot a West Coast-style IPA — mashed with Washington grown barley, Munich, and crystal malts. We used a mixture of Cascade, Crystal, and Columbus fresh hops, which were hand been handpicked and delivered to our brewery an hour before we used them! To round things out, we dry-hopped this beer with Simcoe and Mosaic.

This beer exudes a classic west coast-style IPA flavors — pine, orchard fruit, and a crisply bitter finish with that atypical resin on your tongue sensation.

PINK YOSHI (RASPBERRY BERLINER WEISSE)

4.4% ABV // 0 IBU // 9.5 P

light body + raspberry + bubbly

For the second year in a row, we brewed this crushable treat for our good friends at the Latona Pub! This kettle sour brew was mashed with wheat and Pilsener malts from Skagit Valley Malting and fermented with our ale yeast on top of 500 lbs of fresh organic raspberries from Hedlin Farms. The final touch - Bottle and Keg conditioned with Champagne yeast to create an extra dry, bubbly, and intensely tart experience. Pink Yoshi 2019 is by far the sourest beer we have ever made - think raspberry warhead...

DAS BOOT (FESTBIER)

5.6% ABV // 28 IBU // 12.6 P

Festbier is the modern Oktoberfest style, otherwise known as Wiesn. Originally introduced by the Paulaner Brauerei, now all six Munich braueries who make up Oktoberfest pour this style. This contemporary lager is much lighter, similar to a strong Helles. Das Boot is made up of two imported Pilsener malts, a touch of Carahell, and hopped moderately with Mittelfruh and Perle for delicately complex hop profile. It was double decoction mashed to bring the rich malt flavor to the surface. This beautiful lager is fully aged, and 100% naturally carbonated.

COASTAL PILS

4.8% ABV // 40 IBU // 1.046 OG

light body + zesty bitterness + crisp Brewed in similar fashion to the northern German style pilsner, we named this beer Coastal Pils as a nod to Germany’s coastal region where notable examples exist. Not to be confused with a Bavarian Pilsner, this style has a more pronounced zest and citrus-like bitterness. While not German, we prefer the flavor of Czech Saaz hops, which were used at a rate of 1 lb per barrel to create the distinct hoppy flavor. This lager is fully attenuated, hoppy with a refreshing mineral finish.

DISCO LEMONADE (BERLINER WEISSE)

4.5% ABV // 4 IBU // 1.040 OG

light body + effervescent + tart

The People's Champagne is back! Brewed in the Berliner Style, this sour weisse (white) beer uses Pilsner malt from Skagit Valley along with a large volume of wheat, then fermented with Lactobacillus and our house ale strain. We create this beer every year as a toast to Summer. So raise your glasses and cans - It’s time to celebrate!

FRANCES FARMER (SAISON)

5.6% ABV

medium body + CITRUS + DRY

Frances Farmer is crafted with a blend of top fermenting saison yeasts in stainless steel. After primary fermentation is complete, it is transferred into a foeder for maturation with 3 strains of brettanonmyces. This batch began our solera-esque program where we remove a portion of the matured beer from the foeder for packaging. Freshly fermented Frances is then added back to the foeder to replace what was removed, and to continue the maturation process.

Inevitably the subsequent batches will vary slightly and age for different lengths of time. This particular batch was matured in oak for 6 months, then spent 4 months conditioning in the bottle and kegs with brettanonmyces.

FRESH HOP KELLERBIER (HELLES)

4.5% ABV // 18 IBU // 10.5 P

light body + fresh hops + crisp

Our third and final fresh hop beer of the season is a pale unfiltered lager in the Franconian Landbier style. The use of singular freshly picked wet Chinook hops, and malt from Mellrichstadt, Germany make up the base of this country-style lager. To obtain proper conditioning, it was cold fermented with Bavarian origin yeast and held in our cellar for an extended period.

With notes of honey, earthy spice, fresh wildflower aromas, and a matchstick like mineral bitterness to round out the flavor — this beer is clean, crisp, dry and as always, hops were sourced from Growing Veterans Farm in Lynden, WA.

HELLES (VOLLBIER)

Helles Vollbier is the latest release from our obsessive approach to authentic lager brewing. This beautifully delicate lager is simple - and only created with the highest quality Organic German Pils and Mittelfruh hops. A double decoction mash takes single malted lager to a height of malt complexity. The hop character sublimely balances the palate, while the carbonation is 100% natural, resulting in a most drinkable lagerbier.
