The brewers here at Aslan were approached by Justin Leigh from Dwinell Country Ales with the idea of creating a collaboration with a little bit of a different flair. Very quickly, Torch of Certainty was born. A beautiful blend of Saison and Barrel-Aged Sour Ale was created to rest atop a blend of red wine grapes from Gunkel Orchards in Maryhill, WA. The blend of grapes provided is as follows: Mourvèdre (20%), Syrah (20%), Zinfandel (20%), Viognier (20%), Petit Sirah (10%), and Merlot (10%). The pairing of the grapes with the saison and sour ale produced a beer that is reminiscent of natural red wine (which Dwinell also produces). Torch of Certainty is lightly tart while maintaining a huge fruit kick. Flavors of (you guessed it) red wine mingle with lemon zest, strawberry, and a hint of cranberry while a light, spritzy carbonation leaves a drying affect on the palate.
