The strong burst of citrus in Sauvage is powerfully anchored by the malty strength of Skagit Valley Malting Pilsner. The effervescence and acidity bring it all together. It was kettle-soured overnight to drop the pH, giving a mellow tartness. It was hopped with Nelson Sauvin and Hallertau Blanc and co-fermented with our house London Ale yeast and a phenolic, belgian yeast strain. After it finished fermenting, we filtered it and bottled it. It was then conditioned in the bottle on Champagne yeast, giving it its distinctive effervescence. Instantly recognizable, this beer is meant for celebration.
