Fresh hop season at Aslan has arrived! For the fourth year in a row, we're honored to work with Growing Veterans to create this year's Charlie Foxtrot IPA. This beer was hopped with a mixture of Chinook, Centennial, Crystal, and Columbus fresh hops. It has a balanced bready, malt backbone that helps carry the hop flavors of citrus, pineapple, pepper, and pine. Charlie Foxtrot tends to flies off the shelves and we are okay with that because fresh hops are best consumed, well... fresh. Get it while it's here!

Das Boot is back! This year we brewed our seasonal Festbier with Smaragd, a descendant of Hallertau Mittelfrüh (a hop steeped in German brewing tradition). This hop provides a delicate floral and peppery note that balances the malt profile. The combination of Pilsner and Munich malt contributes flavors of toast with honey and fresh dough. This beer celebrates the coming of fall and is perfect for the upcoming cooler nights!

While Belgian brewers are typically known for their expressive ester profile and mixed fermentation, there's one Belgian brewery in particular that makes a beautiful Belgian-style lager that we used as inspiration for this very special beer. Guiding Star is an easy lager with aromas of lemon zest and fresh croissants. The smooth, crispy mouthfeel accentuates flavors of baking spices and cake breads with an herbal, spiced hop character that helps this beer finish with a clean, full bitterness.
A portion of the proceeds of this beer are going towards the Washington Chapter of the American Foundation for Suicide Prevention.

The malt supports hop flavors of apricot, cedar, and orange peel that leaves us feeling like we're drinking at a river in the woods. Helles is a beer of tradition but it's also a beer for the people. It is the everyday beer over in Germany and we can see why. This beer is easy drinking with a malt-forward presentation that is balanced with a restrained hop bitterness. Cracker, white bread malt characters give way to a soft, floral, and peppery hop profile. The beer is incredibly drinkable and designed to be consumed in a German beer hall (or if you can't find one your local socially distanced outdoor patio will do)!

Much like it's namesake, a bright colored carnivorous plant, Cape Sundew appears brilliant yet delicate on the outside, with a powerhouse in the middle-- showcasing one of our favorite hop profiles yet. Heavily hopped with Eureka, Citra and Sabro, Cape Sundew is packed with fruit flavors ranging from stonefruit, to coconut and citrus, with the slightest amount of bitter resin. Deep in color and smooth on the palette thanks to the malted oats and Vienna malt, Cape Sundew delivers as a well-rounded, crushable double IPA perfect for all your late summer shenanigans!

For the first few years we released a fruited variant of Captain Ron, we used a different fruit every year. This year we're stoked to be bringing back Blackberry Ron. The sweetness from 500 lbs of blackberries compliment the pineapple and bitterness of Captain Ron. We are pumped with how this year's batch turned out. This is a beautiful beer to enjoy outside on the patio while the sun is shining! Get some while you can, very limited quantities available only on draft!

Every summer we look forward to the time between the 4th of July and fresh hop season. That's because a very special IPA comes out today! Captain Ron is a brewery favorite. This beer is jam packed with New Zealand hops with a splash of German Huell Melon. You're greeted with a rush of aromas of pineapple, white wine, and orange juice. The soft mouthfeel provided by the oats helps create the tropical vibes these hops are looking for. Flavors of citrus (grapefruit and lime specifically), pear, and pineapple balance out a faint, pleasant bitterness creating a drying sensation that feels akin to a mimosa. This beer is vacation in a can. Grab a pint or a six pack and take your vacation today!

Yakima Select is a Pilsner brewed to celebrate the beauty of the growing region we call home. We wanted to prove (to ourselves) that using strictly Washington-grown organic ingredients, we could still produce a proper Pilsner. This beer uses one malt variety from Skagit Valley Malting and one hop variety from Roy Farms. For all the simplicity, this beer has nuance and character. The malt provides a light, bready body that carries the herbal and lemon flavors from the hops to a clean, drying bitterness. Yakima Select is undoubtedly Washington and is as Cold as the Cascades. Grab a six-pack and enjoy on your next Northwest adventure. Cheers

We are very honored to have been able to blend this beer with Teku Tavern for their 4th anniversary. Cuvee Sortir a blend of three different mixed culture Saisons, all aged for different amounts (six months, two years, and three years) of time in wine barrels. A light, refreshing acidity, a delicate brett character, and a mild stone fruit note round this beer out, making it feel like a celebration in a glass. We hope you help us by raising a glass to our friends at Teku Tavern with a hardy "Cheers to 4 years!"

Organic Flanders Style Brown Ale

We crafted this beer two years ago, and after fermentation finished (about a week), we sent this beer to rest in wine barrels for two years. It developed subtle sourness that helps balance the milk chocolate and dried fruit flavors. Equally qualified to be enjoyed in the sun on the patio or inside on a cozy evening.

Our first fresh hop beer of 2016 was brewed with 50 lbs of Centennial hops grown in a unique coastal micro-climate in Northern California. These Centennials provide intense aromas and flavors of pine which dominate in the beer. Calculated at an astounding 181 IBUs (although we highly doubt its actually that bitter), this beer is an example of what woodsy, piney and dank hops have to offer when used fresh and in the right proportions.

We infused our Frances Farmer! Made in the Dupont style, this classic representation of a farmhouse ale is light in color with a soft mouthfeel complemented with lots of carbonation. It was fermented and conditioned with 50 lbs of organic white nectarines which add a subtle, yet complex fruit note to this refreshing brew.

For this year's Washington Beer Collaboration Festival, we teamed up with North Fork Brewery head brewer, Eric Jorgensen. This deep red, moderately tart beer exudes flavors of dark chocolate and pie cherries. In the spirit of creative collaboration, we went a step further and dry hopped it with Nelson Sauvin to create a truly unique beer that exemplifies the strengths of both North Fork and Aslan brew.

This special creation comes to you from the mind of Jenn Tadder, the **Bellingham Homebrewers Guild 2015 Homebrewer of the Year**. In addition to some new hardware for her trophy shelf, Jenn won the opportunity to brew a collaboration beer with our Masterbrewer, Frank, and will enter it as Bellingham’s first Pro-Am entry in the WA Beer Awards! The result is a delicately malty beer with notes of toffee, a soft bitterness, and a clean, refreshing finish.

This special beer was created in collaboration with our organic brothers to the south, Elliott Bay Brewing Co. It is a strong American Pale Ale with Nugget, Simcoe, and Amarillo hops used the boil kettle, and then generous amounts of Amarillo and Mosaic for dry hopping. The use of English Pale malt enhances the body, while a combination of London and American Ale yeasts provide complexity, enhancing the fruity overtones of the Simcoe and Amarillo hops. With notes of papaya and pineapple, this beer is tropical on the nose & tongue.

FIFA, aka French India Farmhouse Ale, is a Farmhouse style IPA brewed specifically for our hometown football club, Bellingham United. This juicy beer initially greets your nose with a spicy array that is blended nicely with pine needles and citrus peels. The palate consists of a heavy dose of white grapefruit, lending a very fun and approachable bitterness. As it washes down, you are left with a nice clean/dry finish that is soft and mellow. This year we have added a brand new hop, Jarrylo, to the mix.

Big, fruity and funky - that’s what unicorn picnics and this beer have in common. To re-create the epicness of a gathering of unicorns having a picnic we took our Dawn Patrol and fermented it entirely with Brettanomyces Lambicus in red wine barrels for several months. What came out was a beer like no other. It’s full of tropical fruit notes, has all that wonderful brett-funk on the nose, and leaves behind a light tartness. So raise a glass to all the unicorns in the world and join the picnic!
